Chantilly Cake

Ingredients

Directions

Prepare the cake

  1. Cut a piece out of the top of the savoy cake and scoop out the inside with a spoon, being careful not to make a hole through the bottom.

  2. Place the cake on a serving dish and pour in the sherry wine, soaking it with a spoon as it absorbs.

Fill and decorate

  1. Once the wine is soaked up, pour custard down the sides and into the cake.

  2. Stick the quartered almonds around the edge and about three around the sides.

  3. Whip cream as for a trifle and place it in the center of the cake.

  4. Garnish with orange peel cut into long stripes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Savoy cake
Provides a light sponge structure that holds the wine and custard.
Sherry wine
Soaks into the sponge, adding moisture and a sweet, aromatic flavour.
Custard
Fills the hollowed cake, adding moisture and a creamy, rich texture.
Whipped cream
Adds a light, airy topping that contrasts with the soaked sponge and custard.

The step that matters

Soaking the sherry into the cake. Pour the wine slowly and spoon it over the sponge as it absorbs. Dry patches stay firm, while a flooded base can turn soggy and collapse, so the cake needs to take up the liquid gradually.

Swap the orange

How well each one fits the dish's main ingredients (sherry, wine, almond, cream):
