What each ingredient does

Beef kidney
Forms the main body of the dish, with a mild, tender texture once cooked through.
Clarified butter
Conducts heat for frying and encourages browning on the kidney slices.

The step that matters

Fry the kidney slices until nicely browned. Frying over sufficient heat drives the Maillard reaction, which browns the surface and builds savoury flavour. Crowding the pan or using too little heat makes the slices steam and turn grey instead of browning.
