What each ingredient does

Tongue
Provides the main meat, sliced and arranged around the cabbage as the centrepiece of the dish.
Spring cabbages
Form the bulk of the centre mixture, becoming soft and concentrated once cooked down dry.
Butter
Adds richness and fat, carrying flavour through the cabbage as it cooks.
Good stock
Adds savoury moisture so the cabbage cooks down tender and well seasoned.

The step that matters

Cooking the cabbage until dry. Squeezing the cabbage dry before cooking and then reducing it over low heat keeps the mixture from being watery, so it holds its shape on the plate and the flavours concentrate.

Swap the cabbage

How well each one fits the dish's main ingredients (butter, pepper, carrot):

  1. Capsicumfits better
  2. Parsnipfits better
  3. Potatofits better
  4. Cabbagethe original

Fit is the average pairing score against butter, pepper, carrot. Candidates are from the same food group and used in at least 100 recipes.
