Partridges, Spinach in Boxes

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Clean and prepare the partridges, seasoning them with coarse sea salt and pepper.

  3. In a pan, melt butter and sauté the spinach until wilted.

  4. Stuff the partridges with the sautéed spinach.

Bake and serve

  1. Place the stuffed partridges in a baking dish and bake for 25-30 minutes until cooked through.

Spinach
Adds moisture and a tender, savory filling once wilted in butter.
Butter
Carries flavor and adds richness when melted and used to sauté the spinach.
