What each ingredient does

Hard-boiled eggs
Provide the white shells and the yolks that form the filling.
Egg yolks
Mashed smooth to make a rich, creamy filling.
Melted butter
Adds fat and richness, keeping the yolk filling moist and smooth.
Beaten eggs
Act as a binder so the bread crumbs stick to the coating.
Bread crumbs
Form a crisp outer layer that browns when fried.

The step that matters

Fry in hot oil until golden brown. Breadcrumb coatings brown through Maillard reactions at high heat; if the oil is too cool the coating absorbs oil and turns greasy, while overcooking can dry the filling.
