Ingredients

Directions

Make the potato mixture

  1. Melt the butter in a saucepan, add the milk, and bring to a boil.

  2. Pass the mashed potatoes through a sieve and add to the boiling milk and butter.

  3. Beat well until the potatoes are very hot, then remove from heat.

  4. Stir in the pepper, salt, and cayenne, then add the egg yolks and mix until the heat dries the eggs.

Shape and coat

  1. Form the mixture into small balls, using flour to prevent sticking.

  2. Beat the egg whites and roll each ball in the whites.

  3. Coat the balls in bread crumbs by rolling them on a sheet of kitchen paper.

Fry

  1. Fry the croquettes in hot clarified fat or lard for 2 minutes.

What each ingredient does

Mashed potatoes
Form the bulk of the croquettes, giving a soft, starchy interior that holds its shape.
Butter
Adds richness and fat, softening the potato mixture and improving flavour.
Milk
Adds moisture so the potato mixture becomes smooth and easy to shape.
Eggs
Yolks enrich and bind the mixture; whites form a coating that helps bread crumbs stick.
Bread crumbs
Form a crisp, golden outer crust when the croquettes are fried.

The step that matters

Mixing in the egg yolks until the heat dries them. The residual heat of the potatoes cooks the yolks gently. If the mixture is too cool, the eggs will not set and the balls may fall apart when frying; the mixture must still be warm enough to bind without scrambling.

Swap the potato

How well each one fits the dish's main ingredients (butter, milk, pepper, egg, bread):

  1. Capsicumfits about as well
  2. Potatothe original
  3. Asparagusfits about as well
  4. Tomatofits less well

Fit is the average pairing score against butter, milk, pepper, egg, bread. Candidates are from the same food group and used in at least 100 recipes.
