What each ingredient does

Egg yolks
Thicken the punch and give it a rich, smooth body.
Milk
Forms the creamy base that carries the other flavours.
Loaf sugar
Adds sweetness and balances the acidity of the lemon and spirits.
Rum
Provides the main spirit flavour and aroma.
Brandy
Adds additional spirit depth and aroma alongside the rum.

The step that matters

Stirring in the egg yolks off the heat. Egg yolks scramble if they meet very hot liquid. Removing the saucepan from the heat before adding them, and stirring gradually, lets them blend in smoothly and thicken gently instead of curdling.
