Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites and yolks are beaten into the syrup, and the whites help clarify it as they set and are skimmed off.
Loaf sugar
Forms the sweet body of the syrup, giving it thickness and sweetness.
Moist sugar
Adds sweetness and a deeper flavour to the syrup.
Orange-flower water
Adds a fragrant floral aroma to the finished syrup.

The step that matters

Gently boil the mixture and skim it well. Boiling gently keeps the syrup from scorching and lets the egg proteins coagulate and rise, carrying impurities to the surface. Skimming removes them, leaving a clear, clean syrup.

Swap the orange

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Orangethe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
