Currant Cake

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Soften the butter by placing it near the stove.

  2. In a bowl, mix the flour and carbonate of soda.

  3. Add the currants, spice, and chopped peel to the flour mixture.

  4. Dissolve the tartaric acid in a little water.

  5. Beat the softened butter and sugar until creamy.

  6. Add the eggs one at a time, beating well after each addition.

  7. Mix in the dry ingredients and the dissolved tartaric acid until smooth.

  8. Pour the mixture into a greased tin.

  9. Bake in a slow oven at 300°F (150°C) for 1 hour and 45 minutes.
