What each ingredient does

Flour
Forms the structure of the dough once mixed with water.
Baking powder
Releases gas during cooking so the dough rises and lightens.
Clean fat
Rubbed into the flour to tenderise the dough and keep it short.
Currants
Provide pockets of fruit sweetness and chew within the rolled dough.

The step that matters

Tie the rolled dough in a cloth and boil for 1.5 hours.. The cloth must be tied firmly enough to hold the roll together but loosely enough for the dough to swell. If the roll is not sealed well, the filling can leak into the water while the dough expands during boiling.

Swap the currant

How well each one fits the dish's main ingredients (flour, sugar):

  1. Raisinfits better
  2. Vanillafits better
