Directions

Prepare

  1. Scald the feet and heads, then clean them.

Make the soup

  1. Place the giblets, feet, and heads in a pot with enough cold water to make soup and bring to a boil.

  2. Add the chopped carrot, turnip, onion, cloves, pimento, and marjoram if using.

  3. Cut the giblets into small pieces and stew them in a little cold water.

  4. Once the stock is ready, strain it over the giblets.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Giblets
Provide the main meat flavour and body of the soup as they simmer.
Brown roux or brown flour
Thickens the soup and adds a toasted, deeper colour and flavour.
Carrot
Adds sweetness and aromatic body to the stock.
Onion
Builds savoury depth as it softens into the stock.

The step that matters

Thicken with brown roux or brown flour. Flour must be cooked long enough to lose its raw taste and bind smoothly. Adding it to hot liquid without first blending it into a paste or slurry can cause lumps, so stir it in gradually.

Flavor stand-ins for the marjoram

The recipe marks marjoram as optional. How well each one fits the dish's main ingredients (carrot, turnip, onion, clove, pepper, flour):

  1. Parsleyabout as good a flavor fit
  2. Marjoramthe original
  3. Thymeabout as good a flavor fit
  4. Turmericabout as good a flavor fit

Fit is the average pairing score against carrot, turnip, onion, clove, pepper, flour. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
