Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fowl
Provides the meat and flavour base of the stock as it simmers.
Brown flour
Thickens the soup so it has body rather than running thin.
Streaky pork
Adds richness and fat to the finished soup.
Lime juice
Adds acidity that brightens the curry flavour.

The step that matters

Browning the carrot, onion and apple. Browning caramelises the natural sugars and builds deeper, savoury flavour in the base. Pale vegetables produce a flatter soup, so they should be coloured well before the stock is added.

Swap the apple

How well each one fits the dish's main ingredients (carrot, onion, lime, flour, pork, rice):

  1. Avocadofits better
  2. Coconutfits better
