Why it works: Pepper and sage match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Pork Faggots

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Combine lean pork, fat, lights, soaked bread, chopped onion, pepper, salt, and sage.

  2. Pass the mixture through a mincing machine.

  3. Grease a baking tin.

  4. Form the mixture into balls and place them in rows on the tin.

  5. Pour a little water over the balls to keep them moist.

  6. Bake at 350°F (175°C) for 1 hour and 15 minutes.
