Why it works: Sage and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Sucking Pig

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Kill the pig, scald, clean, and truss it the day before cooking.

  2. Skewer the legs as if the pig is lying down.

Stuff and score

  1. On the day of cooking, prepare the stuffing with soaked bread, onions, sage, pepper, and salt.

  2. Stuff the mixture inside the pig and sew it up.

  3. Make a long cut down the pig's back from nose to tail, then score down each side.

Bake and serve

  1. Bake in a 400°F (200°C) oven for 2 to 2.5 hours, basting frequently.

  2. Cut the pig in half down the backbone before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pig
Forms the whole dish; its fat and skin become crisp and golden during roasting.
Soaked bread
Soaks up juices and fat, keeping the stuffing moist and tender.
Onions
Add sweetness and moisture to the stuffing as they soften and release juices.
Sage
Adds a savoury, aromatic herb flavour that complements the pork.

The step that matters

Basting frequently during baking. Regular basting keeps the surface moist while fat renders and the skin browns, preventing dry meat and burnt patches over the long roast.

Swap the apple

How well each one fits the dish's main ingredients (bread, onion, sage, pepper, sauce):

  1. Limefits better
  2. Lemonfits better
  3. Avocadofits better
  4. Applethe original

Fit is the average pairing score against bread, onion, sage, pepper, sauce. Candidates are from the same food group and used in at least 100 recipes.
