Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the fish

  1. Preheat the oven to 400°F (200°C).

  2. Prepare the fish by dressing it from the head.

  3. Scald the crackers and mix with oysters, butter, salt, and pepper to make the dressing.

  4. Stuff the fish with the dressing and top with bacon slices.

Bake and make the sauce

  1. Place the fish in a baking pan with several tablespoons of water and bake, basting often.

  2. For the sauce, powder the yolks of the hard-boiled eggs and mix with olive oil and vinegar until creamy.

  3. Season the sauce with dry mustard, salt, pepper, sugar, and lemon juice.

  4. Just before serving, stir in the cream.

  5. Garnish with sliced lemon and parsley.

What each ingredient does

White fish
Forms the main body of the dish, cooked gently in the oven with moisture from the pan.
Crackers
Soak up liquid and bind the dressing so it stays moist inside the fish.
Oysters
Add briny flavor and tenderness to the stuffing as they cook.
Hard-boiled eggs
Yolks are powdered and blended into the sauce, giving it a thick, creamy body.
Bacon
Its fat bastes the fish as it bakes, adding savory flavor and browning.
Cream
Added at the end to enrich the sauce and give it a smooth, mellow texture.

The step that matters

Basting the fish in the oven. Fish is lean and dries out quickly in dry heat. Frequent basting with pan liquid and bacon fat keeps the surface moist while the stuffing heats through.

Swap the mustard

How well each one fits the dish's main ingredients (fish, oyster, butter, pepper, egg, olive, vinegar):
