Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Prepare the dressing by mixing bread crumbs, parsley, onion, salt, butter, water, and cayenne pepper.

  3. Fill the fish with the dressing and sew up the opening.

Bake

  1. Place a strip of bacon in a pan and lay the fish on top.

  2. Cut pieces of butter and bacon over the fish.

  3. Add hot water and salt to the pan.

  4. Baste the fish every ten minutes while baking.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fish
Forms the main body of the dish and becomes flaky and tender as it bakes.
Bread crumbs
Bulk for the dressing that soaks up moisture and keeps the stuffing light.
Butter
Adds fat that carries flavor and helps the surface brown and stay moist.
Bacon
Renders fat into the pan, flavoring the fish and keeping it moist as it bakes.
Hot water
Creates steam and pan liquid that moistens the fish during baking.

The step that matters

Baste the fish every ten minutes. Basting spreads the melted fat and pan liquid over the surface. This keeps the fish from drying out and helps it brown evenly while it bakes.

Swap the onion

How well each one fits the dish's main ingredients (fish, bread, parsley, butter, pepper):

  1. Shallotfits better
  2. Potatofits better
  3. Carrotfits better
  4. Onionthe original

Fit is the average pairing score against fish, bread, parsley, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
