Chicken Pie with Oysters

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Cut up the chicken and stew until tender.

  2. Drain the liquor from the oysters and boil it, skimming off any impurities.

  3. Line the sides of a baking dish with the biscuit crust.

Assemble and bake

  1. Layer in the chicken, then a layer of raw oysters, seasoning each layer with salt, pepper, and small pieces of butter.

  2. Pour the oyster liquor and some chicken broth over the layers.

  3. Cover with a crust, making an opening in the center for steam to escape.

  4. Bake for 30 minutes at 350°F (175°C).

Serve

  1. Serve with gravy made from the remaining broth.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main meat, which becomes tender through slow stewing.
Oysters
Supply the main flavour of the filling, releasing their briny juices as they cook.
Biscuit crust
Forms a rich, tender pastry that bakes golden and encloses the filling.
Butter
Adds fat and richness, moistening the layers as it melts during baking.

The step that matters

Making the opening in the crust. The vent lets steam escape while the pie bakes. Without it, pressure builds under the crust, which can make the pastry soggy or lift it unevenly.
