Roast Chicken

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Steam the chicken if it is over a year old until tender.

  2. Mix bread crumbs, salt, pepper, butter, and sage to make a dressing.

Stuff and bake

  1. Stuff the chicken with the dressing and sprinkle the outside with salt, pepper, and flour.

  2. Bake the chicken in a 400°F (200°C) oven until well done and nicely browned, basting frequently.

Make the gravy and serve

  1. Boil the giblets in a saucepan until tender, then chop finely.

  2. Add the chopped giblets to the gravy in the dripping pan, thickened with flour and butter.

  3. Serve the chicken with cranberry sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Whole chicken
Forms the main body of the dish, and its fat and juices baste the meat as it roasts.
Bread crumbs
Absorb moisture and butter in the dressing, giving the stuffing a soft, tender texture.
Butter
Adds fat that carries flavor and promotes browning on the skin and in the dressing.
Flour
Thickens the pan drippings into gravy and helps the outside of the chicken brown.
Dried sage
Adds a savory, aromatic flavor to the bread crumb dressing.

The step that matters

Baking until well done and nicely browned. Stuffed poultry must reach a safe internal temperature throughout, and the stuffing in the cavity heats more slowly than the meat. Basting helps keep the surface moist while it browns.

Swap the cranberry

How well each one fits the dish's main ingredients (chicken, bread, pepper, butter, sage, flour, sauce):

  1. Lemonfits about as well
  2. Cranberrythe original
  3. Limefits about as well
  4. Avocadofits less well

Fit is the average pairing score against chicken, bread, pepper, butter, sage, flour, sauce. Candidates are from the same food group and used in at least 100 recipes.
