Chestnut Stuffing

Ingredients

Directions

  1. Shell the chestnuts and place them in boiling water until the thin skin can be easily removed.

  2. In a saucepan, combine the chestnuts with 1 cup of milk, 1 cup of water, a little vinegar, and ½ cup of butter. Boil until the chestnuts are nearly soft.

  3. Chop the liver of the fowl finely with the parsley and onion.

  4. Mix the chopped liver mixture into the bread crumbs, seasoned with sugar, salt, and pepper.

  5. Stir in the melted butter gradually and add the chestnuts.

  6. Beat the egg yolks with a little milk and add to the mixture. If too thick, thin it with the liquid from boiling the chestnuts.
