Ingredients

Directions

Prepare

  1. Slice the onions thin and soak them in cold water.

  2. Heat a pan and add the steak with a little suet.

Cook

  1. Remove the onions from the water and add them to the steak.

  2. Season with pepper and coarse sea salt, cover tightly, and cook over medium heat.

  3. When the onion juice has evaporated and the meat is browned on one side, turn the steak.

  4. Replace the onions and fry until the steak is cooked through, being careful not to burn.

What each ingredient does

Beef steak
Is the main protein; browns on the surface and cooks through to become tender.
Onions
Release moisture as they cook, then brown and add sweetness to the pan.
Suet
Adds a little fat to the pan so the steak can brown and not stick.

The step that matters

Turning the steak after the onion juice evaporates. Turning too early, before the juice has cooked off and the surface has browned, keeps the steak wet and pale. Waiting for a real brown crust gives better flavor, and the pan must not get so hot that the onions burn.

Swap the onion

How well each one fits the dish's main ingredients (beef, pepper):

  1. Capsicumfits better
  2. Tomatofits better
  3. Carrotfits about as well
  4. Onionthe original

Fit is the average pairing score against beef, pepper. Candidates are from the same food group and used in at least 100 recipes.
