Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Mix dry bread with chopped onion or sage and season well to make a dressing.

  3. Stuff the dressing inside the ribs, roll them up, and tie securely.

  4. Season the outside of the ribs.

Roast

  1. Roast the ribs in the oven for two hours.

  2. Bake potatoes in the same pan if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Side of spare ribs
Forms the main cut that is rolled around the stuffing and roasted.
Dry bread
Soaks up juices and forms the body of the dressing inside the roll.
Onion or sage
Adds aroma and savory flavor to the dressing.
Potatoes
Absorb drippings from the pan and become tender and flavorful as they roast.

The step that matters

Tying the ribs securely. If the roll is loose, the stuffing can spill out and the meat cooks unevenly. Firm, even rolling and tying keeps the dressing enclosed and the roast a compact shape for even heat penetration.

Swap the potato

How well each one fits the dish's main ingredients (bread, onion):

  1. Leekfits about as well
