Stuffed Cabbage

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the cabbage

  1. Cut out the root and heart from the cabbage and remove several outer leaves.

  2. Parboil the remaining leaves and carefully open them.

  3. Season the leaves with salt and pepper.

  4. Fill the leaves with sausage force meat.

  5. Close the leaves and tie the cabbage to secure the filling.

Braise and serve

  1. In a large pan, combine carrots, onions, lard skin, and white broth.

  2. Place the cabbage in the pan.

  3. Cover the cabbage with a little fat from the broth.

  4. Lay a buttered paper on top.

  5. Cook in a 350°F (175°C) oven for one hour, basting occasionally with its juices.

  6. Untie the cabbage and serve hot.

What each ingredient does

Cabbage
Forms the wrapping leaves that hold the filling and become tender when cooked.
Sausage force meat
Provides the rich, savoury filling that cooks through inside the wrapped leaves.
Lard skin
Adds fat to the pan, enriching the juices used for basting.
White broth
Supplies liquid that keeps the cabbage moist and forms the basting juices.
Carrots
Add sweetness and aroma to the braising liquid as they soften.
Onions
Contribute aroma and sweetness to the braising liquid as they cook down.

The step that matters

Tying the cabbage closed around the filling. If the leaves are not closed and secured firmly, the filling can escape or fall out during braising, leaving the cabbage loose and dry.
