Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg
Thickens the dressing as it heats and binds the cream and vinegar together.
Sugar
Adds sweetness to balance the sharpness of the vinegar.
Vinegar
Provides the acidity that gives the dressing its tang.
Cream
Adds richness and softens the sharp taste of the vinegar.
Mustard
Adds sharp flavour and helps keep the dressing smooth.

The step that matters

Boil with constant stirring. Egg proteins set as the mixture heats, so boiling briefly while stirring briskly keeps the dressing smooth and thickened rather than curdled or lumpy.
