Why it works: Flour and raisin match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 9,075 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Bran Bread

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, combine the sweet milk and Orleans molasses.

Mix and bake

  1. Add the bran, flour, baking soda (dissolved in hot water), and salt. Mix well.

  2. If desired, fold in a few raisins.

  3. Pour the batter into a greased loaf pan.

  4. Bake for 1 hour or until a toothpick inserted in the center comes out clean.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Milk and flour barely smell alike, yet cooks put them together in 78,219 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bran
Adds fiber-rich bulk and a hearty, dense texture to the loaf.
Molasses
Adds sweetness, moisture, and a deep color to the crumb.
Flour
Provides structure so the batter holds together as it bakes.
Baking soda
Reacts with the molasses acidity to lift the loaf as it bakes.
Sweet milk
Hydrates the dry ingredients and helps form the batter.

The step that matters

Dissolving the baking soda in hot water. Baking soda must be fully dissolved so it reacts evenly through the batter; clumps can leave bitter spots and uneven rising.
