Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Their starch and mash give the batter body and a soft, moist texture.
All-purpose flour
Provides the gluten and starch that form the structure of the batter.
Yeast
Ferments the sugars in the mixture, producing gas that leavens the batter.
Sugar
Feeds the yeast and adds sweetness to the finished bread.
Ground ginger
Adds a warm, aromatic flavor to the batter.

The step that matters

Let the mixture cool to lukewarm before adding the yeast. The yeast is not mentioned as being added until after cooling, but the recipe does not specify a temperature check beyond lukewarm. Adding yeast to very hot liquid can kill it, so the mixture must be cool enough for the yeast to stay alive and start fermenting.

Swap the potato

How well each one fits the dish's main ingredients (hops, flour, sugar, ginger):

  1. Mustardfits better
  2. Arrowrootfits better
  3. Parsnipfits better
  4. Potatothe original

Fit is the average pairing score against hops, flour, sugar, ginger. Candidates are from the same food group and used in at least 100 recipes.
