Why it works: Milk and vanilla are a kitchen classic. They rank in the top 5% of all ingredient pairs, and cooks put them together in 19,187 recipes. Both carry ethyl caproate, which smells fruity, apple peel. The science ↓
Tapioca Pudding
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare the tapioca
Soak the tapioca in water for several hours, then drain and rub it fine.
Make the custard
In a saucepan, bring the milk to a boil and add the salt.
In a bowl, beat the egg yolks with the sugar, then stir in the hot milk.
Return the mixture to the saucepan and cook until it thickens to a custard consistency.
Add the tapioca and boil for 10 minutes, stirring constantly.
Remove from heat and flavor with vanilla.
Top and bake
Once cool, beat the egg whites with the sugar until stiff peaks form.
Spread the meringue over the pudding and bake at 400°F (200°C) until light brown.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Tapioca
- Thickens the pudding as its starch gels during boiling, giving it a soft, spoonable body.
- Milk
- Forms the liquid base, and its proteins and sugars help the custard set and brown.
- Egg yolks
- Enrich and thicken the custard as they set with heat, adding richness and smoothness.
- Egg whites
- Whipped into the meringue, they trap air to form a light, stable topping that browns in the oven.
- Sugar
- Sweetens the pudding and the meringue, and helps the meringue stay glossy and stable.
The step that matters
Boiling the tapioca with the custard. The tapioca must boil and be stirred constantly so its starch fully cooks and thickens evenly; otherwise it can stay firm or scorch on the bottom of the pan.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
