Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Egg whites whipped to stiff peaks give the cake its light, airy structure.
German chocolate
Provides the chocolate flavor and richness of the cake.
Gelatin
Sets the mixture so the cake holds its shape when cooled.
Powdered sugar
Sweetens the batter and creams with the yolks to add body.

The step that matters

Fold the stiff egg whites into the mixture immediately after adding the gelatin.. Folding gently preserves the air whipped into the egg whites; gelatin begins to set as it cools, so waiting can leave the batter too stiff to fold evenly and lose volume.

Swap the nuts

How well each one fits the dish's main ingredients (sugar, egg, chocolate, gelatin, cream):

  1. Almondfits better
  2. Pistachiofits about as well
  3. Hazelnutfits about as well
  4. Nutsthe original

Fit is the average pairing score against sugar, egg, chocolate, gelatin, cream. Candidates are from the same food group and used in at least 100 recipes.
