Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the milk as it cooks, giving the cream its body and smooth texture.
Milk
Forms the base of the cream and gives it richness and body as it cooks.
Egg yolks
Enrich the custard and help it set into a creamy, thick texture.
Egg whites
Whipped with sugar to form a light, frothy topping over the custard.
Sugar
Sweetens the custard and stabilizes the whipped egg white topping.

The step that matters

Pour the mixture into the boiling milk and cook until it thickens like custard. Tapioca starch needs to reach a boil and be stirred while cooking to gelatinize and thicken evenly. Undercooked starch stays grainy and thin, and the egg yolks can scramble if the heat is too high.
