Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the creamy liquid base that the ice cream is built on.
Condensed milk
Adds sweetness and body, and helps keep the ice cream smooth and creamy.
Cornstarch
Thickens the heated milk so the base holds together and feels smooth.
Gelatin
Adds optional firmness and helps limit large ice crystals when included.

The step that matters

Moistening the cornstarch before cooking. Cornstarch added dry to hot liquid clumps instead of thickening evenly. Mixing it into a little cold milk first lets the starch disperse so it thickens the base smoothly.

Swap the vanilla

How well each one fits the dish's main ingredients (milk, condensed milk, gelatin):

  1. Vanillathe original
  2. Coconutfits about as well
  3. Bananafits less well
  4. Mangofits less well

Fit is the average pairing score against milk, condensed milk, gelatin. Candidates are from the same food group and used in at least 100 recipes.
