What each ingredient does

Strawberries
Provide the flavour and juice that forms the base of the cordial.
Sugar
Sweetens the cordial and helps preserve it once bottled.

The step that matters

Boil gently for one hour. Simmering concentrates the syrup and dissolves the sugar fully. Boiling too hard can cook off fresh strawberry flavour, and an under-reduced syrup may spoil sooner once bottled.
