Mushroom Pie

Ingredients

Directions

  1. Mix the flour with the beaten eggs to form a smooth batter, then add the milk while stirring continuously.

  2. Season the batter and fry in thin pancakes until lightly browned. Make these the day before.

  3. Peel the mushrooms and fry them in butter until cooked.

  4. Cut the mushrooms and pancakes into 1-inch pieces and place them in a pie dish until three-quarters full.

  5. Prepare the gravy by melting 1 oz of butter in a saucepan, adding chopped onion, haricot stock, salt, and browning.

  6. Strain the mixture, stir in 1 tablespoon of flour to thicken, and serve hot.

  7. For the pastry, rub 6 oz of butter into 1 lb of flour, add baking powder and salt, and mix in enough cold water to form a dough.

  8. Roll out the pastry and cover the pie filling.
