Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid so the cream mixture holds its shape as it congeals.
Fresh milk
Provides the liquid that the dissolved gelatine sets into a firm, smooth base.
Rich cream
Adds fat for a rich, velvety texture and a light whipped body.
Sugar
Adds sweetness to balance the dairy and the set dessert.

The step that matters

Pour the cooled milk mixture into the whipped cream and beat well together. The milk mixture should be cooled but still liquid so it blends evenly into the cream. If it is too warm, it can deflate the froth; if it has begun to set, it forms lumps instead of a smooth, uniform mixture.
