Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Sift the flour and cream of tartar together five times.

  2. Sift the powdered sugar separately.

Make the batter

  1. Beat the egg whites to stiff peaks.

  2. Gradually stir the powdered sugar into the egg whites very lightly.

  3. Add the vanilla extract.

  4. Quickly and lightly fold in the flour mixture.

  5. Pour the batter into a clean, ungreased cake pan.

Bake

  1. Bake at 350°F (175°C) for 45 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into stiff peaks, they form the airy foam that gives the cake its structure and lift.
All-purpose flour
Provides the starch and gluten that set the cake's structure once baked.
Powdered sugar
Sweetens the batter while dissolving easily into the foam, keeping it fine-textured.
Cream of tartar
Stabilizes the egg white foam, helping it hold its peaks during mixing and baking.

The step that matters

Folding in the flour mixture. Overmixing knocks air out of the whipped egg whites, so the cake bakes flat and dense. Fold quickly and gently, just until no dry flour streaks remain.

Swap the vanilla

How well each one fits the dish's main ingredients (flour, cream, sugar, egg):

  1. Raisinfits about as well
  2. Vanillathe original
  3. Figfits less well
  4. Strawberryfits less well

Fit is the average pairing score against flour, cream, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
