What each ingredient does

Green tomatoes
Form the bulk of the pickle and absorb the spiced vinegar brine.
Onions
Add savory sweetness and body to the pickle mixture.
Coarse sea salt
Draws out moisture from the vegetables so they drain and stay firmer.
Vinegar
Provides the acidity that preserves and sharpens the pickle flavor.
Brown sugar
Balances the vinegar's sharpness with sweetness and helps form a thick syrup.
Mustard seed
Adds pungent, slightly bitter flavor that deepens as the pickle sits.

The step that matters

Draining after the overnight salt rest. Salt draws water out of the vegetables; if they are not drained thoroughly, the excess liquid dilutes the vinegar brine and leaves the pickles watery and less crisp.

Swap the onion
