Why it works: Butter and milk are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 81,283 recipes. Both carry (z)-4-heptenal, which smells biscuit, cream. The science ↓

Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Make the dough
Sift the flour, salt, and baking powder together twice.
Rub the butter into the flour until well combined.
Mix in the milk and beaten egg to form a soft dough.
Roll out the dough into two long rectangles for a square tin.
Butter the bottom layer and place the second layer on top, marking the top with a fork.
Chill in a cold place or ice box for 15 minutes.
Bake and assemble
Bake in a hot oven at 400°F (200°C) for about 30 minutes.
Remove from the oven and let stand for 3 minutes before separating the layers.
Butter the insides of both layers.
Peel and cut the oranges into small pieces, removing seeds, and let them stand until the cake is baking.
Drain the orange juice and sprinkle sugar over the orange pieces.
Spread the sugared oranges between the layers and return to the oven for 3-4 minutes.
Serve immediately.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Flour
- Forms the structure of the cake layers as the dough sets in the oven.
- Butter
- Rubbed into the flour to add tenderness and richness, and greases the layers.
- Baking powder
- Releases gas in the hot oven, helping the layers rise and turn light.
- Milk
- Hydrates the flour so the dough comes together and adds moisture to the layers.
- Egg
- Binds the dough and adds richness and structure to the baked layers.
- Sugar
- Sweetens the oranges and draws out their juice to moisten the filling.
The step that matters
Bake in a hot oven and separate the layers promptly. A hot oven sets the dough quickly so it rises well. Letting the layers stand briefly before separating prevents them from tearing while still warm and fragile.
Swap the orange
How well each one fits the dish's main ingredients (flour, butter, milk, egg, sugar):
- Vanillafits better
- Raisinfits better
- Figfits better
- Orangethe original
Fit is the average pairing score against flour, butter, milk, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
