Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cod or haddock
Forms the main body of the chowder as it cooks and flakes into the broth.
Potatoes
Release starch as they cook, thickening the broth and giving it body.
Onions
Add sweetness and aroma as they soften in the broth.
Salt pork
Browned first to render fat that flavors the kettle and adds savory depth.
Milk
Adds creaminess and richness to the broth when added near the end.
Hard crackers
Soaked crackers soften and help thicken the broth slightly.

The step that matters

Adding the milk near the end. Milk can curdle or scorch if it boils hard for a long time. Adding it when the chowder is nearly done and boiling only briefly keeps it smooth and creamy.

Swap the parsley

How well each one fits the dish's main ingredients (haddock, potato, onion, pork, pepper, milk):

  1. Garlicfits better
  2. Thymefits about as well
  3. Parsleythe original
  4. Celeryfits about as well

Fit is the average pairing score against haddock, potato, onion, pork, pepper, milk. Candidates are from the same food group and used in at least 100 recipes.
