Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Spinach
Provides the main flavor and green color, and becomes the body of the soup once puréed.
Butter
Adds richness and fat, and forms the base of the roux with the flour.
Flour
Thickens the soup by forming a roux with the melted butter.
Milk
Adds creaminess and mild sweetness, softening the soup's texture.
Stock
Adds savory depth and liquid to the spinach purée.

The step that matters

Adding the milk and boiling. Milk can curdle or scorch when it boils for too long or at high heat, and the soup can separate. Bring it just to a boil and serve right away to keep it smooth.
