Why it works: Bread and egg are a kitchen classic. They rank in the top 13% of all ingredient pairs, and cooks put them together in 22,662 recipes. Both carry (e)-2-octenal, which smells fatty, green. The science ↓
Salmon Croquettes
Ingredients
Directions
Prepare the salmon mixture
Drain the can of salmon and remove any bones or skin.
In a saucepan, heat the white sauce with the salmon, stirring until smooth.
Season with salt and pepper, then spread the mixture on a platter to a thickness of 2 inches and let it cool for 2 hours.
Cut the mixture into pieces and shape them into small pyramids.
Bread and fry
Dip each pyramid in bread crumbs, then in beaten egg yolks, and again in bread crumbs.
Fry the croquettes in hot oil using a wire basket until golden brown.
Drain on brown paper in a warm oven.

What each ingredient does
- Salmon
- Forms the main body and flavor of the croquettes.
- White sauce
- Binds the salmon so the mixture holds its shape when cooled and shaped.
- Egg yolks
- Coat the pyramids and help the bread crumbs adhere and brown during frying.
- Bread crumbs
- Form a crisp, golden outer crust when fried.
The step that matters
Cooling the mixture before shaping. The mixture must cool and firm fully so the pyramids keep their shape; shaping it warm lets it slump, and the coating then falls off in the hot oil.
