Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the main meaty filling that gives the croquettes their body and flavor.
Butter
Adds richness and fat that helps carry flavor through the filling.
Flour
Thickens the butter and milk into a sauce that holds the croquettes together.
Milk
Forms the liquid base of the thick white sauce, giving it a smooth, creamy texture.
Eggs
Bind the cooked filling so it holds its shape, and the beaten egg helps bread crumbs stick.

The step that matters

Cooking the white sauce until thickened. The flour must be cooked with the butter and milk until the starch swells and thickens fully. If the sauce stays thin, the mixture will not hold its shape when shaped and fried.
