Why it works: Pineapple and strawberry match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 433 recipes. Both carry delta-dodecalactone, which smells sweet, creamy. The science ↓

Tea Punch

Ingredients

Directions

Make the base

  1. Make a quart of rich, heavy sugar syrup while hot.

  2. Pour the hot syrup over the orange juice, pineapple juice, and strawberry or currant or cherry juice.

  3. Let the mixture stand until cool.

Finish the punch

  1. Prepare 1 pint of strong tea using 1 teaspoon of tea for each cup of freshly boiled water.

  2. Add the chopped ice to thoroughly cool the mixture.

  3. Ensure the tea flavor supports the fruit flavors without being detectable.

What each ingredient does

Sugar syrup
Provides sweetness and body that balances the sharp fruit juices.
Orange juice
Adds bright citrus acidity and aroma to the punch.
Pineapple juice
Contributes tropical sweetness and tart fruit flavor.
Strawberry, currant, or cherry juice
Adds berry color and fruity depth to the punch.
Strong tea
Adds tannin for a subtle astringent backbone under the fruit flavors.

The step that matters

Let the mixture stand until cool before adding ice. Hot syrup poured over juices must cool fully first; adding ice too early can dilute the punch unevenly and dull the flavors. Tea strength also matters, since weak tea leaves the punch flat while overly strong tea turns bitter and overpowers the fruit.

Swap the orange

How well each one fits the dish's main ingredients (sugar, syrup, pineapple, strawberry, tea):

  1. Vanillafits better
  2. Peachfits better
  3. Apricotfits better
  4. Orangethe original

Fit is the average pairing score against sugar, syrup, pineapple, strawberry, tea. Candidates are from the same food group and used in at least 100 recipes.
