Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Chicken Gumbo

Ingredients

Directions

Prepare the chicken

  1. Roll the chicken pieces in flour and fry them in bacon fat until golden.

Make the gumbo

  1. In a separate pan, fry the chopped onion until translucent.

  2. Add the sliced okra, parsley, red pepper, and salt to the onion, and stir well.

  3. Pour in the chopped tomatoes and boiling water, then add the fried chicken.

  4. Cook everything together until the chicken is very tender, adding more hot water if you prefer a thinner soup.

Serve

  1. Serve with a spoonful of boiled rice in each dish.

What each ingredient does

Chicken
Forms the main protein; slow simmering in the liquid makes the meat very tender.
Flour
Coats the chicken so it browns in the fat and helps thicken the soup.
Okra
Releases natural starch during cooking, giving the gumbo body and a thicker texture.
Onion
Softens and sweetens as it cooks, building the base flavor of the soup.
Tomatoes
Add acidity and liquid, balancing the richness of the fried chicken.

The step that matters

Frying the chicken until golden. Flour-dredged chicken browns through the Maillard reaction in hot fat, creating flavor and a surface that holds up during simmering. Pale or crowded frying leaves the coating soft and the flavor flat.
