What each ingredient does

Tomatoes
Provide the main body, acidity and flavour of the sauce.
Flour
Thickens the strained tomato sauce so it clings to the macaroni.
Butter
Rubbed with flour to form a roux that thickens the sauce and adds richness.
Macaroni
Forms the starchy base that holds the sauce within the baked dish.
Grated cheese
Melts into the sauce, adding savoury flavour and a rich, stringy texture.

The step that matters

Cooking the macaroni. Cooking pasta in plenty of water lets it expand and soften evenly. Rinsing cold stops further cooking, so the pasta keeps its shape through baking.
