What each ingredient does

Sugar
Forms the crystal structure that gives fudge its firm, sliceable body as it cools.
Milk
Adds moisture and dairy fat, making the fudge creamier and softer in texture.
Butter
Adds fat, which contributes smoothness and a richer mouthfeel to the fudge.
Chocolate
Provides the chocolate flavor and adds fat that helps keep the texture smooth.
Marshmallows
Add sweetness and softness, giving the fudge a chewy, tender bite.

The step that matters

Cooling completely before cutting. Cooling lets the sugar crystals set into a firm, stable structure. Cutting while still warm can leave the fudge soft, sticky, or crumbly.
