Corn Gems

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, combine corn meal, flour, baking powder, and sugar.

  3. In another bowl, whisk together sweet milk and eggs.

  4. Melt the butter and add it to the milk and egg mixture.

Make and bake

  1. Pour the wet ingredients into the dry ingredients and mix until just combined.

  2. Grease gem pans and fill them with the batter.

  3. Bake for 15-20 minutes or until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corn meal
Provides the main body and the coarse, crumbly texture typical of corn gems.
Flour
Adds structure so the gems hold their shape after baking.
Eggs
Bind the batter and help set the crumb as it bakes.
Baking powder
Releases gas during baking so the gems rise and turn light.
Butter
Adds fat for tenderness and a rich flavour.
Sugar
Adds sweetness and helps the crust brown.

The step that matters

Mix until just combined. Overmixing the wet and dry ingredients develops gluten in the flour, which makes the gems tough and dense rather than tender.
