Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the main almond flavour and body to the cream base.
Bitter almonds
Add a concentrated almond aroma that stands out against the sweet almonds.
Fresh cream
Supplies fat and richness, giving the blanc its smooth, creamy texture.
Gelatine
Sets the cooled cream mixture so it holds its shape when served.

The step that matters

Heating until it just begins to scald. Overheating the cream can make it separate or taste cooked, while stirring constantly over low heat prevents the milk solids from catching on the pan and burning.

Swap the orange

How well each one fits the dish's main ingredients (almond, cream):

  1. Vanillafits better
  2. Coconutfits better
  3. Avocadofits better
  4. Orangethe original

Fit is the average pairing score against almond, cream. Candidates are from the same food group and used in at least 100 recipes.
