Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable dessert as it cools.
Grated chocolate
Gives the dessert its chocolate flavor and color.
Milk
Forms the creamy liquid base that carries the gelatine and chocolate.
Sugar
Adds sweetness and balances the flavor of the chocolate.
Egg whites
Whipped and folded in, they add a light, airy texture.

The step that matters

Beat in the whipped egg whites. Once the mixture has cooled slightly, the whites should be folded in gently so they keep their air. Stirring hard or letting the mixture cool too far can deflate the foam and make the texture dense.
