Ingredients

Directions

Prepare

  1. Place the cream over ice until thoroughly chilled.

Whip

  1. Whip the cream with an egg beater or whip churn until it froths.

  2. While whipping, place the froth on a sieve and return any that passes through to the bowl to be re-whipped.

  3. If the cream is difficult to whip, add the egg white and beat with it.

Finish

  1. Sweeten and flavor the whipped cream to taste.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Heavy cream
Its fat and proteins trap air and form the whipped foam structure.
Egg white
Its proteins help stabilize foam when cream is hard to whip.
Vanilla extract
Adds aroma and flavor to the finished whipped cream.

The step that matters

Chill the cream thoroughly before whipping. Cold cream whips to a stable foam faster because the fat globules stay firm and trap air better. Warm cream whips slowly and can turn grainy or fail to hold its shape.

Swap the vanilla

How well each one fits the dish's main ingredients (cream, egg):

  1. Vanillathe original
  2. Raspberryfits about as well
  3. Strawberryfits less well
  4. Coconutfits less well

Fit is the average pairing score against cream, egg. Candidates are from the same food group and used in at least 100 recipes.
