Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sour milk
Provides liquid and acidity that reacts with the baking soda to lift the batter.
Eggs
Bind the batter and help it set as it cooks.
Baking soda
Reacts with the acidic sour milk to produce gas that lightens the pudding.
Cornmeal
Forms the thick body of the pudding and sets as it cooks.

The step that matters

Stir in cornmeal to the right thickness. Cornmeal thickens and sets the pudding as it cooks. A batter that is too thin may cook into a loose, soggy pudding, while one that is too thick may turn dense.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, egg, cream, sauce, sugar):

  1. Nutmegthe original
  2. Cinnamonfits about as well
  3. Gingerfits less well
  4. Capersfits less well

Fit is the average pairing score against milk, egg, cream, sauce, sugar. Candidates are from the same food group and used in at least 100 recipes.
