Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hard-boiled eggs
Form the centre of each Scotch egg, giving the dish its core and substance.
Stale bread crumbs
Absorb the milk to form a binding paste that holds the coating together.
Cooked lean ham
Provides savoury flavour and meaty texture in the coating around the egg.
Raw egg
Binds the ham and crumb mixture so it sticks to the hard-boiled egg.
Milk
Softens the bread crumbs into a smooth paste that adds moisture to the coating.

The step that matters

Covering the eggs evenly. If the ham mixture is thin or patchy, the coating can split or leave bare egg in the boiling fat. An even, firm layer protects the egg and keeps the coating intact during frying.

Swap the mustard

How well each one fits the dish's main ingredients (ham, bread, milk, pepper, egg):

  1. Capsicumfits better
