Why it works: Clove and cinnamon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,189 recipes. Both carry ethyl cinnamate, which smells sweet, balsamic. The science ↓

Potted Fish

Ingredients

Directions

The book says “a good oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Soak the fish in salt water for several hours.

  2. Cut the fish into slices and place in a jar.

  3. Add cloves, allspice, cinnamon, pepper, and coarse sea salt.

  4. Sprinkle a little flour and butter on top.

  5. Cover the jar tightly and bake at 400°F (200°C) for 2 to 1.5 hours.

  6. Remove from the jar and press into a bowl.

  7. Once cold, cut into slices and serve with jelly.
